Garudiya is a simple fish soup from The Maldives

Garudiya is a simple soup from The Maldives, using the most plentiful resource – fish.

Ingredients:

2 cans of sustainable, pole caught tuna (about 200 grams each) – I used the coles own brand which had big chunks, this works best.

1 large red chilli

1/2 onion, sliced

5 cups of water

sprinkle of salt

 

Directions

1) Place all the ingredients into a saucepan, slowly bringing it to the boil.

2) Allow the soup to cook for 20-30 minutes, tasting to make sure that the water is increasing in flavour.

3) Ladle into bowls. Eat hot.

Because I could, I followed this dish up with a dessert: Dhonkeyo Kajuru
