Laplap (Vanuatu)

Laplap has many variations and the following is my take.

 

Usually laplap is cooked in an in ground oven. I don’t have one of those so I used a bbq with a rack and a smoke box. You could also use a kitchen oven. Both should be about 150 degrees.

Ingredients:

2 small sweet potatoes (traditionally a cassava) – I used different varieties

1 small can of coconut cream

1 banana

a few banana leaves (bigger are better).

 

Directions:

20130730-215051.jpg 1) Grate the sweet potatoes finely. Mix some of the coconut cream. make a paste like mix.

2) Tear the banana leaves. These will be used to wrap the mix.

3) Place some of the sweet potato mix in the middle of the banana leaf. pour a little coconut cream over. Add some slices of banana, then a little more coconut cream.

20130730-215223.jpg4) Wrap the mix with the banana leaf. Tie with some baking string.

5) Place the laplap on the rack in the bbq with the smoke box.

6) cook for 1 1/2 – 2 hours.

7) Peel the leaves back. eat the mix. Enjoy.
