Mealie Bread – Swaziland

Th 6th of September 1968, the Kingdom of Swaziland received its independence.

 At the end of 1921 King Sobhuza 11 was installed as king, a role he maintained until his death in 1982). King Sobhuza 11 was very loyal to the British and many soldiers were involved in the second world war. As the war ended, the king began negotiations for complete independence for the Swazi people.

The following cornbread is a traditional southern african dish, one eat in Swaziland. Swaziland does not have an official national dish, but this dish seems to be a very popular food.

Ingredients:

1 egg

150 grams maize meal

150 grams plain flour

1 1/2 teaspoon baking powder

pinch of salt

pinch of sugar

120 ml milk

2 cobs of corn (with husks on)

 

Directions:

1) Beat the egg in a bowl. Add the meal, flour, baking powder, salt and sugar.

2) Slowly add the milk. The product should be doughy. If too liquid add equal mixes of flour and maize until doughy, or add more liquid if not doughy enough.

3) Carefully husk the cobs of corn, keeping each leaf as unbroken as possible. Taking a few leave, place a few tablespoons of dough on the leaf. (I made 4 equal parts.

4) In a large saucepan place the corn cobs (cut into 4 pieces each). Add enough water to just lift the corn off the base. Place the parcels of husks and dough on top of the corn. Bring to a simmer, cover, and cook for 45 minutes.

5) Serve warm with butter!
