Kansiyé – Guinea

It is independence day in Guinea! (October 2nd)

 

 

French Guinea was colonised by the french in 1890’s. From independence in 1958, the rulers of Guinea have taken much of the wealth for themselves.

 

Kansiyé

Ingredients:

1 cup brown lentils

2 tablespoons oil

1 onion

salt and pepper

1/2 teaspoons thyme

1 tablespoon parsley

1/4 teaspoon ground cloves

1/4 cup peanut butter

1 1/4 cups tomatoes

2 cups of stock

Directions:

1) Soak the lentils for a couple of hours.

2) Fry the onion in the oil. Add herbs and spices. Fry for a minute. Add the lentils.

3) Mix the peanut butter with the stock and tomatoes. Add to the lentils slowly. Cook until the lentils are soft. You may need to add more stock.

4) Serve with rice.
