Eating their food on their national day

Ingredients:

4 Plantain

1 tablespoon lemon juice

1 onion, diced

1 habernero chilli (or another whole chilli)

1 small green capsicum, diced

2 tomatoes, diced

1 tablespoon ground cumin

1 teaspoon tumeric

1 teaspoon red chilli powder

1 1/2 teaspoon coriander powder

2 cups stock

1 tablespoon peanut paste (natural peanut butter)

 

Directions:

1) Cube the plantain and drizzle the lemon juice over the top.

2) Heat the oil and cook the diced onion with the whole chilli (it will be removed later).

3) When the onion is translucent add the capsicum and cook for a few minutes. Add the tomatoes and the herbs and spices. Cook for a minute. Add the stock.

4) When coiling add the plantains and the peanut paste. Cook until the plantain is cooked. Serve hot.
