Nshima and Ndiwo – Zambia

On the 24th of October in 1964 the people of Northern Rhodesia became independent from Britain, becoming The Republic of Zambia.

Zambia

In recent years Zambia has stabilised, mostly due to the increased mining activity and discovery of large copper deposits.

Tourism plays a large part in the economy of everyday Zambians. Popular attractions such as Victoria Falls and the Kafue National Park.

 

Nshima and Ndiwo

This was a simple and fun recipe. It does have a very strong peanut butter taste to it. Next time I will add more greens and less peanut paste.

The Nshima was very simple and tasted pretty good. Possibly could make a rice flour version too.

Nshima:

Ingredients

1/2 cup cold water

1 cup maize meal

2 1/2 cups boiling water (in saucepan)

 

Directions

1) Mix cold water and maize meal together. It should be close to a paste consistency.

2) Add the paste to the boiling water. Stir consistently until it reaches a porridge like consistency. Leave in pan and remove from the heat.

 

Ndiwo

Ingredients

1 cup water

1/2 onion, chopped

1 cup chopped spinach

1 cup crunchy peanut butter (or 1 and a bit cups of peanuts blended with a little bit of water)

1 tomato, diced

 

 

Directions:

1) Bring water to the boil add the chopped onion. Cook until the onion is tender.

2) Add the spinach and peanut butter. Stir and bring to the boil. Cook for a few minutes. Add the tomato and cook for a further 5 minutes.

3) Remove from heat and let stand.

 

 

To serve/eat:

Serve the Ndiwo in a bowl. To eat take some of the Nshima and dip into the ndiwo. Eat.
