Calulu – São Tomé and Principe

The 12th of July is the Independence day of São Tome and Principe, commemorating their 1975 independence from Portugal.

Ingredients

3 tablespoons of palm oil

1 onion, finely chopped

2 cloves garlic finley diced

3 tomatoes, diced

1 red capsicum, seeded and diced

1 eggplant diced

1 cherry chilli, finely diced

1/2 cup of stock

1 teaspoon cumin seeds

1 tablespoon of chopped basil

1/2 small cabbage chopped

handful of spinach leaves, chopped

Directions

1) Heat the oil in a saucepan. Add the remaining ingredients. Stir though. Cover on a medium heat and cook for 25 minutes or so until all elements are cooked through and the vegetables are beginning to fall apart. You can thicken the stew with some corn flour if it does not thicken on its own.

2) Serve with rice.
