Pot au Feu – France

France celebrate their nation day on the 14th of July. It is called Fête Nationale (in english it is called Bastille Day). It celebrates the start of the French Revolution.

Pot Au Feu

Ingredients:

1.5 Litres water – stock

3 brusied bay leaves

10 black pepper corns

1/2 teaspoon of thyme leaves

1/4 bunch of parsley – chopped

1 onion

6 cloves

1 celery stalk

1 turnip – quartered

3 carrots, halved length ways

1/2 mini cabbage, quartered

 

Directions:

1) Push the cloves into the onion.

2) Bring the broth to the boil. Add the bay leaves, peppercorns, thyme leaves and parsley. Allow o cook for 10 minutes.

3) Add the remaining ingredients. Cook, covered on a low boil for about an hour.

4) Remove the vegetables from the broth. Strain the broth and return it to the heat, discard the ingredients strained. Cook at a medium boil uncovered to reduce the stock.

5) Add the broth and vegetables to a bowl, Serve with mustard and bread.
